Scones were Joanna's first cooking triumph in "Summer In December". Don't forget to make a wetter mixture for a lighter scone, as her recipe said.

Joanna's Triumphant Scones (or: The Pigs Will Go Hungry Tonight!)

Ingredients:

2 cups of all-purpose flour
2 tbsp. of granulated sugar
4 tsp. of baking powder
1/2 tsp. salt
1/3 cup butter ( or margarine )
1 egg
1 egg yolk
1/2 cup ( approx. ) light cream ( or milk )
1 egg white, lightly beaten
1/4 cup of granulated sugar

Procedure:

Mix together the flour, sugar, baking powder and salt in a large bowl.
Cut in the butter until the mixture resembles coarse crumbs. In a small bowl, combine the egg, egg yolk and cream; beat with a fork to blend.
Add all at once to the dry mixture, stirring with a fork to make a soft, slightly sticky dough
( add a little more cream if necessary.)
Press into a ball and knead gently on a floured surface about ten times.
Roll out the dough to about 1/2 inch of thickness; cut into triangles or rounds.
Place on an ungreased baking sheet.
Brush with the egg white and sprinkle lightly with the sugar.
Bake in a 425 degree F. oven for 12 to 15 minutes or until golden.

You can experiment with variations on the recipe. For example: add raisins or other dried fruit, or, add seasonings such as cinnamon or nutmeg, etc.

Makes 12 to 16 scones.

Serve warm with butter and jam, and, if you like, whipped cream (Devonshire style, as Lindsay, from "No Legacy For Lindsay", served them.)

Who could forget how Janet of "Heir To Windrush Hill", rose to the challenge and saved the day on her arrival at her new home in New Zealand. A true culinary rescue!

Janet's To-The-Rescue Oatcakes

Ingredients:

1 & 1/2 cups of rolled oats
1 & 1/2 cups of all-purpose flour
1/4 cup of granulated sugar
1/2 tsp. of baking soda
1/2 tsp. of salt
3/4 cup of cold butter ( or margarine)
1/3 cup of ice-water ( approx. )

Procedure:

In a large bowl combine the first five ingredients.
With a pastry blender or two knives cut in the butter till the mixture is pebbly.
Sprinkle the ice-water, a little at a time, over the dry ingredients while pressing with a fork to form a ball.
Add just enough of the water to hold the dry ingredients together.
Shape the dough into a ball and press flat, or divide it if you don't want to prepare it all at once, and wrap in plastic wrap.
Refrigerate any you don't want to use. Will keep for several days.
Roll the dough out at room temperature into a square about 1/4 of an inch thick.
Cut with a cookie cutter ( circles or triangles are traditional ).
Put on a greased cookie sheet and bake at 350 degrees F. for 15 to 20 minutes or till crisp and golden. They may require a longer cooking time, depending on your oven.

They are good plain or with jam. Also nice served with cheese.

Note: I like to roll mine a bit thicker so that they are softer.

Elspeth's Perfect Pikelets
( To Charm The Heart Of A Child )

Recipe # 1

Ingredients:

1 cup of self-rising flour
a pinch of salt
1/4 tsp. of baking soda
3 tbsp. of sugar
1 egg, beaten
2/3 cup of sour milk*
2 tsp. of melted butter

*Note: You can sour fresh milk by adding 1 tsp. of vinegar or lemon juice. Let the milk stand in a warm place till it sours.

Procedure:

Sift the flour, salt and baking soda together.
Add sugar.
Mix the egg and milk together and add to the dry mixture.
Mix to a smooth batter and add the melted butter, then stir.
Heat and grease a pan, drop the batter by dessertspoonfuls onto the pan.
Cook until bubbly on top, light brown underneath. Turn and cook the other side.
Cool.
Serve plain, buttered, or with butter and jam.

Recipe # 2
Ingredients:

8 oz. of flour
3 oz. of sugar
2 level teaspoons of baking powder
1 oz. of melted butter
2 beaten eggs
8 oz. of milk ( approximately )

Procedure:

Put the dry ingredients into a bowl.
Pour in the eggs and the melted butter and mix, gradually adding the milk as needed to get a smooth batter.
Bake on a griddle greased with cooking oil, not butter, butter tends to burn.

You can bake the pikelets in simple round shapes ( like pancakes ) or make puppets, as Elspeth did in "Sweet Are The Ways".

This recipe is remarkably similar in taste and structure to an Indonesian cookie that is called a "waffle". This name comes from the fact that this cookie is baked in a waffle iron ( like the one Elspeth used ). Both the recipe for pikelets and the one for waffles appears to be similar, except that the Indonesian recipe uses coconut milk instead of milk. Sometimes, for variation, they also add thin slices of banana in the waffles.

Note: Recipes using coconut milk usually do not keep more than 24 hours, so don't make more than you can serve wthin that time period.

Elissa made these Bacon and Banana Rolls as a special treat for the children. She served them with scrambled eggs.

Elissa's Quick And Easy Bacon And Banana Roll-Ups

Ingredients:
2 large bananas
1 tbsp. of lemon juice
6 strips of bacon

Procedure:
Saute the bacon briefly, until some of the fat has rendered. Remove the bacon and drain on paper towels.
Peel bananas and cut into 2 inch chunks.
Place on a dish and sprinkle with the lemon juice.
Slice the bacon in strips long enough to wrap around each banana slice.
Fasten with toothpicks, threading through the bacon.
Put the bacon and bananas under a grill and cook for about 10 minutes, turning once, till bacon is done.
