Erica's Red Velvet Cake

Ingredients:
1/2 cup butter / margarine
1 1/2 cups sugar
2 eggs
2 oz. red food coloring
1 tsp. vanilla
2 tsp. cocoa powder
1/2 tsp. salt
1 tsp. baking powder
2 1/2 cups cake flour
1 cup buttermilk
1 tsp. baking soda
1 tsp. vinegar

Method:
Cream the butter and sugar together. Add the eggs, food coloring and vanilla. Mix in the dry ingredients alternately with the buttermilk. In a separate dish, mix the baking soda and vinegar. Fold into the batter. Pour into two greased and floured 8-inch round pans. Bake in a pre-heated 350 degree F. oven for 25 minutes, or until a toothpick comes out clean. Cool for 10 minutes and remove from the pans. Cool completely. Frost with white whipped frosting.

White Whipped Frosting

Ingredients:
6 tbsps. of flour
1 cup of milk
1/2 cup of butter / margarine
1/2 cup of shortening
1 cup of sugar
a dash of salt
2 tsp. of vanilla

Method:
Cook the flour and milk SLOWLY in a saucepan until the mixture forms a ball and leaves the sides of the pan...Stir constantly! Remove from the heat and cool completely. Cream all the other ingredients and add to the cooled flour and milk mixture. Beat until smooth and fluffy like whipped cream. Brush the crumbs off of the cooled cake and frost, using all of the frosting. Decorate with spearmint leaves and red candies for the " holly " look. Store the frosted cake in the refrigerator.
